Passover Recipes: Matzo Ball Soup, Gefilte Fish and a Seder Table Without Chametz

For the eight days of Passover (seven in Israel), Jewish tradition forbids chametz: leavened wheat, barley, spelt, oats and rye in any form other than matzo, the unleavened bread made only from flour and water and baked, by Jewish tradition, within 18 minutes of mixing. Ashkenazi custom also sets aside kitniyot, a category that includes legumes, corn and rice. Every dish below is made without either.

Two of them, the matzo balls and the gefilte fish, are made with matzo meal. Some families, by custom, avoid matzo soaked in liquid for most of the holiday, so check these two against the custom of your own table.

Chag Pesach sameach – a happy Passover.
