Polish cooking runs on sour and smoke. Rye soured into zakwas, cabbage soured into sauerkraut, cream soured and stirred in at the end; then smoked sausage, dried wild mushrooms, and a bay leaf in nearly everything. It is a cuisine of long cooking, and several of its best dishes are better on the second day than the first.
The Polish recipes here come in pairs, each traditional version alongside a lighter one.
Soups. Zurek, sour rye soup with white sausage and a halved egg; barszcz czerwony, the clear beet broth poured over uszka on Christmas Eve; rosol, the Sunday chicken broth; and kapusniak, sauerkraut soup.
Dumplings. Pierogi, with keto, gluten-free and plant-based doughs; the tiny ear-shaped uszka; and kopytka, potato dumplings cut on the diagonal.
Main dishes. Bigos, the hunter’s stew reheated over days until it tastes of itself; golabki, cabbage rolls in tomato; and zrazy wolowe, beef rolled around pickle and bacon.
Sides and sweet. Placki ziemniaczane, potato pancakes, and makowiec, the poppy seed roll that appears at every Polish Christmas.
