Lighter versions of the dishes in Traditional Recipes, in keto, gluten-free and plant-based directions depending on what the dish will bear.
The working rule is that an adaptation has to start from what the original actually tastes like. Cauliflower does not become a potato because you call it one, and a dumpling with no dough is not a dumpling. So the changes here are specific rather than uniform: almond and psyllium where a dough needs to stay elastic, roasted vegetables where meat was carrying the depth, kefir or cashew where sour cream was doing the work. Where a swap costs too much, it says so.
What these are not: the traditional articles carry the history, the holiday context and the regional arguments. The healthy versions deliberately leave that out. They are recipes, not retellings, and they assume you have read the other half if you wanted it.
Where the adaptations work hardest. Borscht without the beet sugar problem. Pierogi across three different doughs. Cholent that still tastes of twelve hours. Challah that still braids. Matzo balls that hold together.
