The Ashkenazi kitchen was shaped by a calendar and a body of law as much as by geography. No cooking on the Sabbath produced cholent, a stew put in the oven Friday afternoon and eaten hot at Friday lunch. The Hanukkah requirement to fry in oil produced latkes and sufganiyot. Bread braided for Shabbat became challah. The constraints came first; the dishes followed.
The Ashkenazi recipes here come mostly in traditional and lighter pairs.
Soups. Matzo ball soup, and whether your kneidlach sink or float; and beet borscht, served cold with sour cream.
Main dishes. Cholent, and holishkes, sweet and sour stuffed cabbage.
Sides and appetizers. Latkes; noodle kugel, which starts arguments about sweet versus savoury; and gefilte fish, made the way it was before the jar.
Bread, breakfast and sweet. Challah; blintzes filled with farmer cheese; babka, and sufganiyot.
